And I’m not a genius.
I grew up a normal North Texas suburban kid on a Standard American Diet. Chicken fingers. White bread. You know the type.
I thought there was nothing wrong with what I ate until my health began to slip in young adulthood. I found solace in changing not just how I ate, but thinking intentionally about where my food came from.
I want to be part of giving back to my community— hence, That Grain Genius. Think of my as a good grain advocate for other North Texans. Don’t be a stranger, come say hi.
Where to say hi
I’m here every Saturday from 8 AM to noon at the Coppell Farmers Market, with a mission to connect North Texans with the rich, wholesome grains grown right here at home—because good health doesn’t mean giving up indulgence. In fact, I believe the opposite: when you start with the right ingredients, like freshly milled grains and a dash of intention, indulgence and nutrition can go hand in hand.
At the stand, I don’t just educate—I offer something tangible. You’ll find Barton Springs Mill flour, some of the finest local flour around, along with my original Otzi cake mix.
I’m here to remind you that gluten isn’t the enemy—poorly treated, over-processed grains are. Good grains—real grains—are full of flavor, texture, and nutrition. Whether you’re a baker, a health-conscious eater, or just someone who appreciates a great slice of cake, I invite you to join the movement of enjoying grains the way they were meant to be: vibrant, local, and a little indulgent.
